Ingredients for Steamed Mussels:

  • 50 mussels (cleaned)

  • 1 glass of white wine

  • 2 glasses of water

  • 2 shallots (finely chopped)

  • 1 carrot (finely chopped)

  • 1 clove of garlic (crushed)

  • 10 black peppercorns

  • 1 teaspoon of thyme

  • 1 bay leaf

  • 1 teaspoon of black pepper

  • 1 teaspoon of salt

  • 4 tablespoons of chopped parsley

  • 3 tablespoons of raw cream

  • 2 egg yolks

How We Prepare Steamed Mussels:

  1. Clean and Wash the Mussels
    Ensure the mussels are thoroughly cleaned and rinsed before cooking.

  2. Create the Broth
    In a pot, bring the white wine, water, shallots, carrots, garlic, black peppercorns, thyme, and bay leaf to a boil.

  3. Steam the Mussels
    Once the mixture is boiling, add the mussels. Cover the pot and cook until the mussels open.

  4. Prepare the Sauce
    Remove the opened mussels from the pot and strain the broth. Return the strained broth to the pot, add salt, black pepper, and cream, and bring to a boil again.

  5. Thicken the Sauce
    Beat the egg yolks and slowly add them to the pot, stirring continuously until the sauce thickens.

  6. Final Touches
    Add the mussels back into the sauce and cook for a few more minutes. Garnish with chopped parsley and serve hot, alongside warm, crispy bread for dipping.
