Spaghetti with Clams and Garlic

Spaghetti with Clams and Garlic

At Restaurante La Venus, we bring you a true taste of the Mediterranean with our Spaghetti with Clams and Garlic. This classic Italian dish, originating from Naples, combines fresh clams, garlic, and a touch of crushed red pepper for a flavorful and satisfying seafood dish. Perfect as a main course, this dish is ideal for those who love the simplicity and freshness of Italian cuisine.

Ingredients for Spaghetti with Clams and Garlic (Serves 6)

  • 1 pound (450g) of spaghetti

  • Kosher salt (to taste)

  • 1/4 cup extra virgin olive oil

  • 4 garlic cloves, minced

  • 1/2 teaspoon crushed red pepper flakes

  • 2 dozen small clams, cleaned

  • 1/4 cup water (or a splash of dry white wine for added flavor)

  • 1/4 cup finely chopped parsley

  • Freshly ground black pepper (to taste)

Instructions for Preparing Spaghetti with Clams and Garlic

  1. Cook the Spaghetti

    • In a large pot of boiling salted water, cook the spaghetti until al dente. Drain and set aside, reserving a little pasta water for later use if needed.

  2. Prepare the Garlic and Red Pepper

    • In a wide, deep frying pan, heat the extra virgin olive oil over medium heat. Add the minced garlic and crushed red pepper flakes, and cook, stirring occasionally, until the garlic is lightly browned, about 1-2 minutes.

  3. Cook the Clams

    • Add the clams to the pan, along with 1/4 cup of water (or white wine for a deeper flavor). Cover the pan and cook for 5-8 minutes, or until the clams have opened. Discard any clams that do not open.

  4. Combine the Pasta and Clams

    • Add the cooked spaghetti to the pan with the clams. Stir in the freshly chopped parsley and toss everything over medium-high heat for about 1 minute, allowing the spaghetti to absorb the juices from the clams.

  5. Serve Immediately

    • Transfer the spaghetti and clams to shallow bowls, garnish with freshly ground black pepper, and serve immediately. For added zest, serve with lemon wedges or a sprinkle of Parmesan cheese.

The Origin of Spaghetti with Clams

This classic dish, known as Spaghetti alle Vongole in Italian, hails from the coastal regions of southern Italy, particularly Naples. Traditionally made in "bianco" (without tomatoes), the dish allows the delicate flavors of fresh clams, garlic, and olive oil to shine. It's a simple yet elegant dish that has become a beloved staple of Italian cuisine, enjoyed worldwide for its fresh, bold flavors.

Health Benefits of Clams

Clams are packed with essential nutrients, including lean protein, omega-3 fatty acids, and vitamins like B12. They are also rich in minerals such as iron and zinc, which are essential for a healthy immune system. Including clams in your diet can help support heart health and provide a nutrient-dense seafood option.

Tips for Perfecting Your Spaghetti with Clams and Garlic

  • Wine Pairing: Serve this dish with a light, crisp white wine such as Pinot Grigio or Sauvignon Blanc to complement the briny clams and enhance the overall flavor.

  • Spice Level: If you prefer a spicier dish, increase the amount of crushed red pepper flakes or add a pinch of chili flakes for extra heat.

  • Fresh Herbs: For a fresher, herbaceous finish, garnish with additional parsley or basil.
