Ingredients for Seafood Rice (Serves 6):

  • 1 pack of frozen mixed seafood

  • 2 cups carolino rice

  • 1 red bell pepper, diced

  • 150g tomato pulp

  • 100ml white wine

  • 2 garlic cloves, minced

  • 1 bay leaf

  • 2 tablespoons olive oil

  • 1.5 liters water

  • 1 packet seafood cream

  • Spicy seasoning, to taste

  • Salt, to taste

  • Fresh cilantro, for garnish

Preparation Instructions:

  1. Prepare the Seafood:
    In a pot, bring 1.5 liters of water with a pinch of salt to a boil. Add the frozen mixed seafood and cook for a few minutes. Strain the seafood, reserving the broth to dissolve the seafood cream. Set aside the cooked seafood.

  2. Sauté the Rice:
    In a large pan over medium heat, add olive oil, minced garlic, and a bay leaf. Sauté until the garlic turns golden. Add the diced red bell pepper and rice, stirring for a few minutes to coat the rice in oil.

  3. Add Tomato and Wine:
    Pour in the tomato pulp and white wine, stirring well. Allow the wine to fully evaporate before moving on to the next step.

  4. Cook the Rice:
    Add 4 cups of the reserved seafood broth, seasoning with salt and spicy seasoning to taste. Let the rice cook for about 7 minutes, or until nearly done.

  5. Add Seafood and Cilantro:
    Once the rice is almost cooked, stir in the prepared seafood. Cook for a few more minutes until everything is heated through. Garnish with freshly chopped cilantro and serve hot.
