Ingredients for Mediterranean Fish Soup

For the Fish Broth:

  • 1 kg fish (fish bones and/or heads)

  • 1 onion

  • 2 carrots

  • ½ bunch of celery

  • 2 bay leaves

  • Salt and pepper to taste

For the Mediterranean-Style Fish Soup:

  • 500ml fish stock

  • 20ml olive oil

  • ½ onion (finely chopped)

  • ½ garlic clove (finely chopped)

  • ½ cayenne pepper (chopped)

  • 20g capers

  • 30g olives

  • 1 sprig of fresh dill

  • 5-6 cherry tomatoes (diced)

  • 40ml white wine

  • 60g fish (use salmon, cod, or your choice)

  • 8 shrimp

  • 10 mussels


Instructions for Mediterranean Fish Soup

For the Fish Broth:

  1. Use a 5-6 liter saucepan. Add the fish, cleaned vegetables, salt, and pepper, and cover with cold water.

  2. Bring to a boil, and reduce the heat. Simmer on low, skimming off any foam that rises to the top, until you have a clear, flavorful broth (about 1-2 hours).

  3. Strain the broth and set aside.

For the Mediterranean-Style Fish Soup:

  1. In a small saucepan, heat olive oil and sauté the onion and garlic until soft.

  2. Add the cayenne pepper, olives, capers, and fish (diced). Stir everything together and allow it to warm through.

  3. Add the cherry tomatoes and deglaze with white wine. Let the wine simmer for 1-2 minutes.

  4. Pour in the fish broth and bring the mixture to a boil.

  5. Add the shrimp and mussels. Cook for another 2-3 minutes, ensuring the seafood is cooked but not overdone.

  6. Finish with freshly chopped dill and serve with slices of toasted bread.

  • You can use any type of fish in this soup; salmon, cod, or hake work well.

  • Add extra seafood such as octopus, squid, shrimp, or crab for a richer flavor.

  • Be cautious not to overcook the seafood, especially the shrimp and mussels, to maintain their tenderness.
